Edacious Kitchen + Bar Ribbon Cutting Ceremony

07/17/2023 – On Wednesday, July 19, at 2:00pm, there will be a ribbon cutting ceremony at Edacious Kitchen + Bar, the new business at 33451 Lake Rd.

Andrew Gorski and Craig Hoover became friends when they were co-owners of other establishments. They jokingly said that they should start their own concept. But eventually they found themselves talking seriously about concepts, and about what different variety of food and atmosphere they could provide if they got the chance. They looked for spaces in Avon Lake for almost two years before the opportunity arose to take the space that had formerly been The Caslon. They wanted a unique name and logo. Andrew spent numerous hours thinking of a name and came up with Edacious Kitchen + Bar. Craig read the meaning of Edacious and was hooked. They teamed up with David Maison, an architect and third co-owner alongside Craig and Andrew.

The menu at Edacious will be seasonal food with American Cuisine presented in a Rustic technique driven fashion. The hours will be Monday through Thursday 11:30am – 10pm; Friday and Saturday 10:30am – 11pm; and Sunday 10:30am – 9pm. They will be open for lunch 7 days a week and brunch on Saturdays and Sundays. “The atmosphere will be open & social with Chicago vibes and neighborhood friendliness,” says Hoover.

Edacious will boast one of Avon Lake’s most distinctive business logos, to be sure: a head that is half rabbit and half pig. “We wanted to something that would catch your eye,” said Hoover. “We had a few renderings done and I think it was about the sixth one was the one we loved.”

The City of Avon Lake is always thrilled at the opening of a new business, but particularly so when it is a unique business in one of its Focus Areas. “In 2019, Avon Lake updated its Comprehensive Land Use Plan and established three Focus Areas for development: Lake Road, Lear Road, and Town Center. Edacious is on Lake Road in the heart of the Lake Road Focus Area, and we believe that with it will come the vibrancy that we seek in this part of the City.”
